Each one has been carefully selected and is cooperating with us for years.
First probes of milk is been taken directly after arrival of milk truck, for quality check.
Raw milk is pasteurized according to European legislation
Feta production process according to EU Legislation for Feta as Protected Designation of Origin PDO. Filling of the moulds, draining of cheese, moulds are turned 3 times, the Feta achieves its form as a block, due to its own weight. No pressing is allowed, each Feta Block has approx. 2kg. The Feta is then put in metal tins, salted and has to be mature for at least 2 months in brine.
High tech. cutting lines cut and weigh fully automatically the Feta blocks into requested portions of 150g, 200g, 400g etc. Our precise check weigher is passed by each portion. Portions which have not the desired weight, are rejected. The others continue on Conveyer belts to the vacuum machineries.
Each portion continues after it has been vacuum packed through a metal detector. Our quality assurance takes probes during complete production process until finished product. Only from our quality department released product with strict internal specification limits are loaded to leave our factory, in cooled trucks or containers.
Tins are opened for packaging in vacuum. Only 2 months old Feta and older with according
Specifications and analyses results are released from our quality control for packaging.
